Happy New Year!!

2014 is shaping up to be an eventful year: I'm graduating from BYU and beginning the next chapter of my life. I'm still not quite sure what I'm doing but I'll keep you all posted :)

Normally I have a long list of resolutions, but this year I am keeping it rather short. Hopefully this year I will be able to keep most of them!


  • Read 2 novels every month
    • I am taking suggestions for which books to read, so hit me with your favorites!
  • Travel somewhere new
    • I'm hoping to go internationally...Europe has been teasing me far too long so that's top of my list. Any suggestions on where to go is great! I'm really thinking the UK
  • Learn to quilt!
    • I am getting a sewing machine for Christmas when I get back home and am super excited to do this one :)
  • Swim, swim, swim!
  • Keep up my flexitarian diet
  • Learn to dance like on So You Think You Can Dance
    • This probably won't happen but hopefully it won't me feel so lame when I watch SYTCD

Oh my heavens! I think I am still full from Thanksgiving! The fam came out from Dixie and we immediately began feasting as soon as their plane touched down :) Every year I convince myself that I'm not going to eat everything in sight, but then I think, "There's no calories on holidays! I bet I could eat that whole pie!"

This year was no different. There was just so much delicious food that I couldn't help it! Mama Lo and Aunt Kris just kept cooking and cooking and cooking! Then I went to Grandma's and there was more cooking :) Everything you can imagine was available for consumption:

  • Pumpkin pie (obviously)
  • Turkey
  • Mashed potatoes 
  • Pumpkin mashed potatoes
  • Cherry pie
  • Banana cream pie
  • Strawberry rhubarb pie
  • Green bean casserole
  • Stuffing
  • Rolls
  • Cranberry sauce
  • Candy, candy, candy
  • Fried rice
  • Chicken parmesan
  • Chocolate milk 
  • Tortellini 
  • Spaghetti
This is just the list I can remember! I'm  not going to need to eat again until Christmas! Tune in next time for a post about all the shenanigans of the Lopez family in Utah :)  
Can you believe that summer is winding down?! I bought one of my books for class yesterday! Crazy stuff. At the beginning of the summer I decided to try eating only fruits, veggies, and grains. It's been an interesting adventure for sure.

I've had to be quite creative sometimes when planning meals. I've fallen in LOVE with quinoa. This amazing grain, dubbed a super food by experts, is super high in protein and is quite filling. Through this whole adventure I think that has been the hardest part: finding enough things to eat to keep me full. Couscous is another great option for a hearty grain with great nutritional value.

At the beginning of my veggie summer it was really, really hard. I had to be super conscious of what I was eating, especially when going out to eat. Buuut, I've liked it so much that I'm making it permanent--with a few adjustments. Meat is good and I need to make sure I'm getting enough protein. So it's more of a flexitarian diet, as a friend called it.

I'm thinking once a week. That's how I did it this summer and I feel great! I have so much energy, my skin looks better, and my fridge is filled with color fruits and veggies :) It's like a mini farmers' market in my fridge.
