With my Europe trip just a little over a week away I have been experimenting with different ways to do my hair that don't take a lot of time. I want to avoid spending lots of time on my hair so I can spend time seeing all the sights! I have heard great things about sea sprays so I decided to give it a go this morning. I was hoping to get those beachy waves and for the most part I did. I was pleasantly surprised. 

I hopped online and found an awesome recipe to make at home so I gave it a whirl. It's super simple and you'll most likely have all the ingredients at home--a major plus in my book!

  • Clean spray bottle
  • 8 oz. of warm water
  • Small dollop of  hair gel
  • 1/2 tbs. sea salt or epsom salt (I used epsom salt)
  • Essential oil or macadamia oil (I used orange extract to great affect)

Mix everything in your spray bottle and give a nice shake. After you towel dry your hair, spray generously, scrunch, and head on your way! No more curling irons or flat irons needed!

I had been home exactly 32 hours when my mother asked me to make dinner. If she had asked me right after my high school graduation I would have laughed at the hilarity of the request. At that time of my life my cooking skills stretched all the way to grilled cheese and tomato soup. Fast forward one college education and my skills have greatly improved. 

As soon as she asked I did what 99% of other girls do and headed to Pinterest. I have a cooking board that is full of zillions of recipes and I figure that it's time I start working through them. After scrolling for what seemed like hours, I finally settled on a summer sandwich. One of my favorite things about summer is all the fresh fruit and veggies that are in season! Since I was making dinner for other people I decided that should probably incorporate some meat into this meal. I absolutely looooved this recipe! I made a salad to go with it and it was perfect. It was surprising filling too!

Sandwich

1 Avocado, sliced

8 Slices of whole grain bread

1 Carton of spreadable goat cheese

Arugula and/or spinach

Deli turkey

Salt and Pepper

Start by spreading the goat cheese on each slice of bread, then layer the turkey, arugula, and avocado slices. Sprinkle salt and pepper on top and cook like a grilled cheese on the stove. So easy :) You can also cook it on a panini press.

Salad

I had a roommate who made this salad all the time and I absolutely love it. It is so easy and so delicious--crisp and fresh. 

stock red romaine lettuce

1 carton of blueberries

1 carton of strawberries

1 small red onion

1/2 cup of candied pecans

Feta cheese

Apple cider vinegar dressing

Chop the romaine, strawberries, and onion and combine with the blueberries. Sprinkle on the feta and pecans, then drizzle on the dressing.

Candied Pecans

In a small saucepan combine equal parts butter and brown sugar (I usually do about 4 tbs of each to 1/2 of pecans) and bring to a boil. Add the pecans and stir until thick. Pour onto a tinfoil-lined pan to cool and then chop into smaller pieces.

Apple Cider Vinegar Dressing

Combine equal parts olive oil and apple cider vinegar. Add salt and pepper to taste and drizzle over your favorite salad!

I made it to NC! I friend and I trekked all the way from Utah to North Carolina and pulled in late last night. I'm still exhausted so a full post will be coming later. To tide you over until then, here is my favorite new song that I discovered on the trip.

In the midst of all my craziness graduation/moving/turning my life inside out I had the opportunity to take a dear friend to the MTC as she begins her mission. Kylee was in my ward growing up and was extremely close with my sister. As we both moved away to college we continued to stay in touch and remained friends. A few months ago she called me to share the exciting news of her mission call with me. I am so excited for her! She will be an absolutely amazing missionary!

I picked her up from the airport, fed her dinner, and put her to bed in preparation for her first day of her mission. On Wednesday we hung around my apartment (which looks like an absolute war-zone as I pack) until it time for lunch. For her last meal we decided on Jimmy John's--an admirable choice I must say. Before we knew it, it was time. I asked if she wanted to call her mother one last time before I took her in. Kylee decided that she did want to talk to her mom, so I got out of the car and unloaded her suitcases while she talked. Little did I know that you HAVE to drive your missionary in, so after she finished her call I put all the suitcases back in and drove the 20 feet to the MTC. We were told that we had two and a half minutes to unpack, take pictures, and say goodbye. I pulled up to the curve and we hustled to get everything finished in time. Eventually we just ripped the band-aid and parted ways: me to the doctor and Kylee to her mission. The people of her mission are going to be so blessed by her!
