Ever since I moved away from Provo, my heart has been longing for a Swig sugar cookie. I don't even like cookies really, but there's something about those cookies that are just perfect. It's like a little piece of heaven in cookie form.

I recently went to a party and was asked to bring something along. I knew someone else was bringing Dirty Diet Cokes so I scoured Pinterest for a recipe for Swig cookies and found a gem! They turned out great so I'm passing the knowledge onto you.

Cookies--Ingredients
1 C Butter (room temperature)
3/4 C Vegetable Oil
1 1/4 C Sugar
3/4 C Powdered Sugar
2 T Water
2 Eggs
1/2 t Baking Soda
1/2 t Cream of Tarter
1t Salt
5 1/2 C Flour
Cream together butter, vegetable oil, sugars, water, and eggs. In a separate bowl, combine the dry ingredients and then slowly add to the butter mixture. Mix everything until combined and you have a crumbly, non-sticky dough.
Roll a golf-ball sized ball of dough and put in your cookie sheet. Take a glass and press the dough ball until it's flat and spills over the edge. (I dipped the bottom of my glass in flour and sugar to give the cookies a crispy top.) Bake at 350 degrees for about 8-12 minutes. The cookies should be barely browning on the bottom. Let them cool, then pop them in the fridge and serve cold.
Make sure you baking rack is in the middle of your oven or they will take forever to bake and won't be as soft! 

Frosting--Ingredients
1/2 C butter (room temperature)
3/4 C Sour Cream
Approx 1 2lb Package of Powedered Sugar (you won't use all of it, but it's good to have extra!)
1t Salt
1/4 C Milk
Red Food Coloring
Cream the butter, sour cream, and salt together. Slowly add powered sugar until it gets too thick to be frosting and then add a splash of milk. Keep this process going until you have the consistency you want. Add 1 drop of red food coloring and you're done! 
Pair with a Dirty Diet Coke and you'll feel like it's summer again!
