Last week I went to Puerto Rico to visit some of my very best friends. It was one of the best weeks ever! Paradise, best friends, and delicious food...what more could you want in life?! I loved ever minute of my stay.

Monday
I boarded my plane and flew to paradise. My travels were pretty uneventful. I read Clayton Christensen's book How Will You Measure Your Life? Such a good read! Seriously, read it! It's a fast read but jam packed with thought provoking ideas. I also sat next to a super nice couple from Phoenix.



Tuesday
This was my first full day in PR. I was still pretty exhausted from my twelve-hour travel day and it was super rainy. Kristen and I headed up to San Juan and went shopping--a girl's favorite pass time. While at Macy's I found this amazing floral suit, much like the one below. I was sorely tempted, but I would have nowhere to wear it.



Wednesday
Kristen and I went kayaking! There is this river that opens up onto a lagoon right by Kristen's house. It was beautiful! There were so many animals and fish. While we were going under the bridge there was this huge spider in its web. I was terrified and kept praying that it wouldn't fall on my face. We both made it though, safe and sound. In the evening Kristen, Alex, and I played cards, watched an episode of  Castle, and called it a day.



Thursday
Before I went to PR I had read online that this beautiful island is home to some amazing caves! Kristen and Alex had been to some so Kristen and I decided to venture out. My GPS, however, took us to a completely different set of caves then the ones we thought we were going to. We drove through the torrential rain and finally arrived at the national park. The caves were amazing! The forest around them looked like something out of Jurassic Park. I fully expected to a velociraptor to jump out from the bushes. Once we were in the cave it was like stepping back in time. The cave was beautiful! There was waterfall in the middle of it. At one point in the tour, we came around this corner and there was a literal 10 degree increase in temperature. Our audio guide then told us it was because there are so many bats that their body heat affects the temperature! Kind of gross, but kind of cool.

Friday
On Friday, we decided to go to Old San Juan. There are tons of free museums in this part of town so we decided to go scout them out. It was pretty rainy this day too but we figured it would work out anyway. We took a tour of the capital and also the cathedral. We didn't find any museums, but it was fun to just walk around and look at all the beautiful buildings. This was one of my favorite days! Old San Juan was just amazing!



Saturday
This was the one day that all three of us were able to go exploring together. Alex and Kristen wanted to show me the rainforest so we drove across the island and started hiking through the forest. We also cut down a vine and did some swinging. It took some convincing on their part to get me to go, but it was actually super fun! We then went to the trail head and hiked up to the waterfall. The waterfall was beautiful! The water was kind of cold, but after we got in it wasn't that bad at all :) From the rainforest we went to the beach. It was finally sunny enough to go! We snorkeled for a little bit and then played in the sand. I love water so much! The beach is one of the best places in the world :)



Sunday
The last day I was there was pretty low key. We went to church, which was all in Spanish. I was able to understand about 25% of it. I knew what each of the talks and lessons were about. Another family in the ward invited us to dinner. We had delicious home-made enchiladas and cookies. It was the perfect way to end my trip! It was one of the best vacations ever!

Ever wonder what goes on in college students' apartments? Well, I can't say for everyone, but my roommates and I just belt songs out at the top of our lungs. We've been singing this for WEEKS! (Note: we're not as good as them)


Utah is the most beautiful place!! I could have sat on this mountain for daaaaysss!

Confession: I collect Pandora stations like Martha Stewart collects floral arrangements. That's not even an exaggeration. Pandora allows you to 'add variety' to a station to expand your repertoire--not this girl. I just make a whole new station! No variety, just another station on the obscenely long list :) Do I use all my stations? Of course not, I listen to the same four ALL the time.

Can you believe that summer is winding down?! I bought one of my books for class yesterday! Crazy stuff. At the beginning of the summer I decided to try eating only fruits, veggies, and grains. It's been an interesting adventure for sure.

I've had to be quite creative sometimes when planning meals. I've fallen in LOVE with quinoa. This amazing grain, dubbed a super food by experts, is super high in protein and is quite filling. Through this whole adventure I think that has been the hardest part: finding enough things to eat to keep me full. Couscous is another great option for a hearty grain with great nutritional value.

At the beginning of my veggie summer it was really, really hard. I had to be super conscious of what I was eating, especially when going out to eat. Buuut, I've liked it so much that I'm making it permanent--with a few adjustments. Meat is good and I need to make sure I'm getting enough protein. So it's more of a flexitarian diet, as a friend called it.

I'm thinking once a week. That's how I did it this summer and I feel great! I have so much energy, my skin looks better, and my fridge is filled with color fruits and veggies :) It's like a mini farmers' market in my fridge.
Yesterday was the last day of my internship, which was bittersweet. Today, to help get me back in the normal routine, I decided to go on campus and run some errands. Per usual, I tried calling Mama Lo while I was walking between buildings. She was at lunch (good excuse? Jury's still out.) and asked me just to text her. The following conversation commenced:

Me: MA! I'm walking across campus!
Mama Lo: And how does it feel?
Me: You know when Harry Potter finds the right wand?
Mama Lo: Is there a gentle breeze and a light shining gently on your angelic face?
Me: Yes and a hush if falling over everyone around me
Mama Lo: I can feel it from here


I have the best mother ever...ever.
I love baking! It makes me happy; it makes others happy; it just makes everyone involved happy. A few weeks ago I found the BEST recipe for scones--seriously, they're to die for! And they're super easy :)

Ingredients

2 cups (10 ounces) unbleached all-purpose flour
1 tablespoon baking powder 
3 tablespoons sugar 
1/2 teaspoon salt 
5 tablespoons chilled, unsalted butter, cut into 1/4-inch cubes 
1/2 cup fruit (I've used blueberries and raspberries) 
1 cup heavy cream

Directions

  1. Preheat over to 425 degrees and put the rack in the middle of the oven.
  2. Place flour, baking power, sugar, and salt in a bowl and mix together. (You can also use a food processor.)
  3. Cut in butter. I used two butter knives, but you can use a pastry blender or your fingertips. You want to create a course meal. Stir in fruit.
  4. Stir in heavy cream with a rubber spatula or fork until dough forms. 
  5. Transfer dough and all the floury bits to the counter and knead into a dough (this step is super super important!) until it no longer falls apart. Place dough into an 8x8 pan; press it all the way into the corners and then turn the dough out.
  6. Cut the dough into triangles. I usually cut it into a tic-tac-toe board and then each section into triangles. 
  7. Place each scone onto a pre-greased sheet. Bake for 12-15 minutes. The tops should be a light, golden brown :) 
I like to glaze the top of my scones with a lemon glaze. It adds a little something extra and the citrus with the berries is an amazing combination!

Glaze

Squeeze the juice of half a lemon, medium sized. Whisk in powdered sugar until it is a thick glaze texture, usually about 2 1/2 cups. Drizzle over cooled scones.

Once upon a time I had to buy a new computer. Like the type-a person I am, I made a pro/con list. Now I'm making another big decision: I'm buying a new camera. I don't want a point-and-shoot. I think I want an SLR camera. My dilemma, though, is that I don't know if I should buy a Canon Rebel or a Nikon D3100. I don't have much any experience in SLR cameras, so any thoughts from the blogosphere would be great!
